According to the USDA’s August Dairy Products report, total cheese
production was 1.20 billion pounds, up 1.7% year over year and 0.5% month over month. From last August, Italian cheese production increased 3.1% with Mozzarella output growing 4.7%. Butter production climbed 14.5% from August 2023 at 138.9 million pounds to 150.0 million pounds in August 2024. However, month-over-month, butter production dropped 3% from July 2024’s levels. Dry whey totaled 65.5 million pounds, a 21.6% drop from the prior year and a 3.2% dip from the prior month.
