Based on the most recent USDA Dairy Products report, total U.S. cheese
output was 1.28 billion pounds for May 2026, up 2.0 percent from May 2025
and 1.1 percent from April 2026. From May 2025, Italian type cheese
production grew by 6.5 percent to 560 million pounds. Most of that growth can
be attributed of the increase in Mozzarella production, which was up 6.2
percent year over year.
